This invention relates to production technology and evaluation of stock raising product quality, in particular, to the production and classification of beef into groups according to its quality: PSE, RSE, DFD and NOR (normal), while the animals intended for slaughter are alive, applicable in intensive beef production processes.
A method for evaluation of beef quality when the animals intended for slaughter are alive by dividing it into the groups PSE, RSE, DFD and NOR by determining the difference of values between positive and negative potential in BAT Ten-Men. If the potential difference is less than 2 μA, beef belongs to PSE group; if the potential difference ranges from 2 μA to 3 μA, beef belongs to RSE group; if the potential difference is above 5 μA, beef belongs to DFD group. This method enables to evaluate beef and sort it into all of quality groups when the animals intended for slaughter are alive.
This method enables to determine the beef quality quickly and exactly and divide the stuff into quality groups: PSE, RSE, DFD and NOR.
All the fundamental studies have been carried out at the site of Ural State Academy of Veterinary Medicine (city of Troitsk, Chelyabinsk region).
