This invention relates to stock raising and is intended for determination of quality of animal products, and it relates in particular to production and classification of beef into groups according to its quality: PSE, DFD and NOR (normal), while the animals intended for slaughter are alive, applicable in intensive beef production processes.
A method for evaluation of beef quality when the animals intended for slaughter are alive by determining the difference of animal’s electrical conductivity in BAT Ten-Fu on positive and negative potentials of an electropuncture device based on which the animals are divided into the following groups while alive: stress-stable animals (if the potential difference is less than 5 μA) producing meat with NOR properties; stress-sensitive animals (if the potential difference is above 5 μA); 45 minutes after slaughter the value of pH of meat is determined in the area of longest muscle of the back between the eighth and twelfth vertebrae; if pH is below 5.7, meat belongs to PSE group; if pH is above 6.2, meat belongs to DFD group.
This method enables to determine the meat quality quickly and exactly and divide the stuff into quality groups: PSE, DFD and NOR.
All the fundamental studies have been carried out at the site of Ural State Academy of Veterinary Medicine (city of Troitsk, Chelyabinsk region).
