This invention belongs to the technology of production and assessment of livestock product quality, in particular, to the production and classification of beef by dividing it into groups according to their quality, DFD (dark, firm, dry) and NOR (normal), determined when the animals for slaughter are alive; it applies in an intensive technology of beef production. A method of determining the beef quality when animals for slaughter are alive by means of determining the difference of electric dermal resistance in BAT Ten-Fu in positive and negative potential of electropuncture device; its distinction consists in the fact that meat is classified into DFD and normal quality groups without checking the animals for stress stability when the animal for slaughter are alive, and the beef is classified as normal or DFD at the difference of potentials of certain values.
